Ingredients

  • 1 pints heavy whipping cream, chilled
  • 1 - 2 Tablespoons sugar
  • 9 ounces thin chocolate wafer cookies

Instructions

  • Beat heavy whipping cream into soft peaks; add sugar, starting with 1 tablespoon, and continue to whip until medium firm peaks form. Taste, and add additional sugar, if desired.

  • In a 13x9 inch baking dish, smear a small amount of whipped cream on the bottom. Layer chocolate wafer cookies so they touch but do not overlap. Layer half the remaining whipped cream, and then one more layer of wafer cookies. Top with remaining whipped cream.
  • Cover tightly with plastic wrap and refrigerate overnight before serving.

Notes

  • Whip the heavy whipping cream until it holds a medium to stiff peak.  If it's too loose, your whipped cream ice box cake will be runny.
  • Powdered sugar can be used for regular white sugar when sweetening the whipped cream.  I prefer a not so sweet whipped cream for this icebox cake, but you can make yours as sweet as you like.
  • Any thin chocolate cookie will work if you can't find chocolate wafer cookies. 
  • When layering, I like to put a tiny smear on the bottom of the dish so that the cookies stay in place.
  • Layer as many layers as you like; however, 1 pint of heavy whipping cream and 1 package of Nabisco chocolate wafer cookies typically will give you 2 layers of cookies and 2 layers of whipped cream (plus a tiny layer at the very bottom for stability).
