Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1/2 large head green cabbage, diced
  • 15 ounces red kidney beans, drained and rinsed
  • 36 ounces canned tomato basil soup 2 19-oz cans work too

Instructions

  • Brown ground beef and onions, drain excess grease in needed.

  • In a large soup pan or saucepan, add diced cabbage, drained and rinsed kidney beans, tomato basil soup, and fried hamburger and onions. Stir to combine. Rinse out the tomato basil soup cans with a little water, and add that to the soup too!

  • Cook partially covered over medium/ low heat, letting the soup simmer until the cabbage is cooked to your desired texture, approximately 25-35 minutes.

Notes

  • The original recipe calls for 1/2 a head of cabbage; if it's a small cabbage, I use the whole thing. 
  • Dried, minced onion can be substituted for fresh, diced onion.
  • I always rinse out my soup cans with a little water to make sure I don't waste any of the soup. Add that water to the cabbage hamburger soup.  
  • Do not sweat it if you have 19 ounce soup cans…a couple of extra ounces won’t hurt anything!
  • If your soup is a little thick, add more water during cooking. 
  • Regular tomato soup works too instead of tomato basil; however, the added flavor from the tomato basil soup is well worth it. 
  • Kidney beans could be omitted, or try swapping in another type of bean.
