Ingredients

  • 1 pound ground pork sausage (bulk sausage)
  • 1 onion, diced
  • 1 green pepper, chopped
  • 16 ounces canned, diced tomatoes (do not drain)
  • 8 ounces wide egg noodles uncooked
  • 1 cup sour cream
  • 1 Tablespoon sugar
  • 1 teaspoon salt
  • 1 - 2 teaspoons chili powder
  • 1 1/2 cups water (approximate)

Instructions

  • In a large skillet, brown ground pork sausage, onions and green pepper. If needed, drain off excess grease.

Notes

  • Any type of bulk sausage would work.  I typically use a breakfast sausage since that's what I have on hand.
  • Sometimes I use dried, minced onion instead of fresh.  Easy substitution!
  • Do not drain the diced, canned tomatoes. I like to break the tomatoes up to make them more palatable for the kids.  I use a meat chopper like this one.
  • I always add sugar to recipes with canned tomatoes or tomato sauce.  The sugar will help tone down the acidity of the tomatoes.
  • If you like a spicier dish, add more chili powder.
  • Add just enough water so that all the uncooked noodles are covered.  If the dish starts to stick, stir in a little bit more water as it cooks.
