Ingredients

  • 1 lb. ground turkey, 99% fat free
  • 1/2 cup onion, diced
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 15 ounces stewed tomatoes, undrained
  • 15 ounces tomato sauce
  • 29 ounces canned cut green beans, undrained
  • 1-2 Tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Instructions

  • In a large skillet or saucepan, brown ground turkey and diced onions. Break into chunks as it cooks. Season with 1/2 teaspoon salt and 1/8 teaspoon black pepper.

  • Add undrained stewed tomatoes. Break up the tomatoes into smaller pieces if desired.

  • Add tomato sauce, undrained green beans, chili powder, garlic salt, and additional 1/2 teaspoon salt and 1/8 teaspoon black pepper.

  • Cook at medium heat, stirring occasionally for approximately 30 minutes.  If a soupier consistency is desired, add water to thin.

Notes

  • In order to qualify as a zero-point recipe with Weight Watchers, be sure to use ground turkey that is 99% fat free.
  • The recipe calls for salt and black pepper in two spots. First off, be sure to season up the ground turkey well as it cooks with the onions. Secondly, add additional salt and pepper when you add the rest of the ingredients to season the soup as a whole.
  • This recipe works best with cut green beans from a can; however, if all you have is the French-style green beans, you can use those as well.
  • This recipe could really be a stew or a soup.  If you prefer a thicker stew consistency, drain the green beans before adding to the saucepan.  If you like a soupier consistency, do not drain the green beans. Also, you could add a couple cups of water to the mixture to thin it out.
  • You can control the spice level of this recipe by adjusting the amount of chili powder.  If you prefer just a little spice, start with 1 tablespoon or if you like it spicy, add 2 or more tablespoons.
  • If you don't have stewed tomatoes, you could use canned diced tomatoes instead.
  • Feel free to swap 2 small cans of tomato sauce for the larger 15 ounce can that the recipe calls for.
