Overnight French Toast Casserole

The French Toast Casserole has a rich, eggy texture and yummy cinnamon flavor, and is prepped overnight.  It also feeds a crowd making it perfect for a leisurely weekend brunch or for a family holiday.

Ingredients
  • 10 cups Brioche bread
  • 6 eggs
  • 2 cups milk
  • 3 teaspoons sugar
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 Tablespoons butter
  • 3 Tablespoons sugar
  • 2 teaspoons cinnamon
Instructions
  1. Spray a 13x9 inch baking dish with cooking spray.

  2. Cut Brioche bread into large 1 inch cubes. Add to the prepared baking dish.

  3. In a mixing bowl, whish eggs, milk, sugar, vanilla and salt. Pour over the bread. Cover tightly with aluminum foil, and refrigerate for 8 hours or overnight.

  4. Remove from oven 30 minutes prior to baking. Preheat oven to 350 degrees.

  5. Dot casserole with cubes of butter. Combine sugar and cinnamon and sprinkle evenly over top. Cover with foil.

  6. Bake for 45 to 50 minutes or until a knife comes out clean. Let sit for 5 minutes before serving. 

  7. Serve with real maple syrup.

Recipe Notes
  • We love using brioche bread because it gives it an extra rich flavor.  You could however use leftover French bread (buy it day old for half price).  If you do this, add 2 extra eggs, and an extra cup of sugar!
  • When you pull this out of the oven, it will be puffed up tall. However, you need to let it rest for 5 minutes to set, and it will naturally fall during that time.
  • This recipe tastes even better then next day.  For real time savers, prep and bake this ahead, and then warm it up in the microwave to eat.
  • Serve with REAL maple syrup. There is no comparison when it comes to this.  The fake sugar syrup does it no justice.
