- 1 pound beef stew meat
- 6 cups water
- 28 ounces crushed tomatoes
- 1 cube beef bouillon
- 1 medium onion, chopped
- 1 teaspoon minced garlic
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 Tablespoon dried basil
- 1 Tablespoon dried parsley
- 1 teaspoon dried oregano
- 12 ounces frozen diced vegetables (corn, peas and green beans)
- 15.5 ounces garbanzo beans, drained
- 15.5 ounces red kidney beans, drained
- 1 cup uncooked macaroni
Season cubed beef with salt and black pepper. Cut beef in smaller chunks, if desired.
Add beef, water, crushed tomatoes, beef bouillon, onion, garlic, salt, pepper, basil, parsley, oregano and frozen vegetables in slow cooker insert. Cook on low for 8 hours.
After the 8 hours on low, add garbanzo beans, kidney beans and macaroni to the soup. Cook for additional 30-45 minutes or until macaroni is cooked to your desired liking.
Serve topped with grated Parmesan cheese.
- If you want additional flavor to this classic minestrone in the crock pot, sear the beef cubes in oil in a skin before adding to the crock pot insert.
- I prefer to cut the 1-inch cubed beef into smaller pieces to make it equal in size to the veggies and beans.
