Ingredients

  • 1 cup brown sugar
  • 2 teaspoons baking soda
  • 1 cup white sugar
  • 4 1/2 cups quick cooking oats
  • 1/4 cup margarine softened
  • 2 cups chopped candy Any combination will work.
  • 1 teaspoon vanilla
  • 1 teaspoon light corn syrup
  • 1 1/2 cups peanut butter creamy or crunchy
  • 3 eggs

Instructions

  • Preheat oven to 350 degrees F.
  • Add ingredients to a mixer bowl in the order listed.

  • Mix on a low speed until fully incorporated.

  • Roll into golf ball sized balls using your hands. Place onto ungreased baking sheet. (If you are using caramel based candies, you may want to spray the pan with nonstick cooking spray.)

  • Bake at 350 degrees F for approximately 10 minutes. The tops of the cookies should look slightly wet when taken out of the oven to prevent over-cooking.

Notes

  • We use quick cooking oats for this recipe.  In a pinch, old fashioned oats could be used.  You can even give them a quick buzz in the food processor to make them more like a quick oat.
  • These make a thick monster cookie, more like a bakery-style monster cookie.
  • Chocolate chips or a combination of chocolate chips and candy can be used.
  • Use creamy or crunchy peanut butter.
  • Barbara used a combination of Twix, Milky Ways, Dove Chocolates and M&Ms.  You could use any chocolate-based candy you have on hand.
  • If you use a caramel centered candy, be sure the candy pieces are not peaking out of the dough before baking. If it is, you risk caramel spilling out and hardening.
  • Remove these from the pan after a few minutes of cooling to prevent them from sticking.
