- 5 ounce box scalloped potatoes (regular or cheesy)
- 1 pound ground beef
- salt and pepper to taste
- 14.5 ounces stewed tomatoes, do not drain
- 1 cup celery, small dice
- 1 1/2 cups water
Preheat oven to 350 degrees F.
Pour potato pouch (save seasoning packet) into 2 quart baking dish.
Brown ground beef in a skillet, drain excess grease if needed. Season with salt and pepper.
Add undrained stewed tomatoes to the ground beef. Break the tomatoes up to smaller pieces. Try using a meat chopper to do this.
Add celery, seasoning packet from scalloped potato box, and water. Stir. Bring to a simmer.
Pour heated mixture over potatoes in the baking dish. Stir. If it seems really thick, add a little bit more water so that all the potatoes are covered barely with water.
Cover with foil and bake for 55 minutes.
Let sit for 10 minutes before serving.
- Use either cheesy scalloped potatoes or regular, either one works.
- The original recipe uses a Betty Crocker boxed scalloped potatoes, but I've used Aldi brand too.
