Ingredients

  • 5 - 6 cups Sliced fresh peaches (frozen can be used, see notes)
  • 1 cup flour
  • 1 1/4 cup sugar (divided in recipe)
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 egg
  • 1/3 cup margarine, melted

Instructions

  • Preheat oven to 350 degrees F. Spray an 8 x 8 inch baking dish with nonstick cooking spray.
  • Mix peaches with 1/4 cup sugar; pour into prepared baking dish.

  • In a bowl, combine flour, 1 cup sugar, baking powder, salt and egg. Whisk until small crumbles form. Sprinkle evenly over top the peach layer.

  • Pour melted butter evenly over peaches. Use a knife to spread it around so all the flour is moistened, if needed.

  • Bake in preheated oven for 40 - 55 minutes. Start checking at 30 minutes cook time. Once it's golden brown, and cooked in the center, it's done.

Notes

  • To easily peel fresh peaches, blanch quickly in boiling water and then immediately submerge in ice water.  The skins will peel right off. 
  • If you are starting with frozen fresh peaches, thaw first and then drain the excess juice.
  • The total amount of sugar is divided in the recipe.  1/4 cup is mixed with the fresh peaches and 1 cup is used to make the crisp topping.
  • I use a whisk to mix together the flour, sugar, baking powder and egg.  Whisk until small crumbles form.
  • Butter can be substituted for margarine, but it might shorten the cooking time. Start checking it at 30 minutes in the oven.
  • Instead of ice cream, try it warm with a splash of milk (or half and half) over top.  Our Dad loves this, and now we do too.
