  • I really like cooking the eggs ahead of time, and storing in the refrigerator for a really quick egg salad.
  • Use your favorite method for hard cooking eggs. I start with mine in cold water, uncovered on the stove. Once they start boiling, I remove from the heat, cover and let sit for 12 minutes.  Rinse in cold water to cool. 
  • To lighten it up, try using reduced fat or fat free mayonnaise. 
  • Miracle Whip is a suitable alterative to mayonnaise, if needed.
