- 4 eggs
- 2 cups sugar
- 15 ounces pumpkin puree canned pumpkin, not pumpkin pie filling
- 1 1/2 cups oil
- 3 cups flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1 teaspoon salt
- 2 cups chocolate chips mini, semi-sweet, dark chocolate or any combination
Preheat oven to 400 degrees F.
In large bowl, beat eggs, sugar, pumpkin and oil until smooth.
In separate bowl, combine flour, baking soda, baking powder, cinnamon and salt.
Add to pumpkin mixture and mix well.*
Fold in chocolate chips.
Fill greased or paper-line muffin cups 3/4 full.**
Bake for 16-20 minutes or until muffins test done (toothpick comes out clean).
If you are making mini muffins, bake for 12-15 minutes or until muffins test done.
*Before folding in the chocolate chips, you can separate the batter into 2 equal amounts. Add 1 cup of mini chocolate chips to one bowl. Add 1 cup of regular semi-sweet chocolate chips (or dark chocolate chips) in the other bowl.
**You can use a regular size muffin pan. This recipe will make about 3 dozen regular size muffins. Or you can use a mini muffin pan. This recipe will make 2 to 2 1/2 dozen mini muffins.
