This Rhubarb Muffins recipe is quick and easy to make. With both whole wheat and all-purpose flour, these rhubarb-applesauce muffins are perfect for breakfast or brunch with a cup of coffee. The kids can help mix together the batter and gobble these muffins up with a big glass of milk.

Ingredients
  • 2 cups flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 1/3 cups brown sugar
  • 1 1/3 cups applesauce
  • 1/2 cup oil
  • 1 1/2 cup chopped rhubarb
  • Topping:
  • 1 teaspoon cinnamon
  • 3 teaspoons sugar
Instructions
  1. Preheat oven to 400 degrees F.
  2. Mix together both flours, baking powder, baking soda, cinnamon, and salt; set aside.
  3. Beat together eggs, brown sugar, applesauce, and oil until smooth.
  4. Pour wet mixture into the dry mixture; stir until just moistened.
  5. Fold in rhubarb.
  6. Prepare muffin tins with liners or spray well with nonstick spray.
  7. Fill muffin tins two-thirds (2/3) full of batter.
  8. Mix together the cinnamon and sugar for the topping. Sprinkle each muffin with the topping mix.
  9. Bake for 18-20 minutes or until a toothpick comes out clean.
