Pollo Fiesta Recipe - Mexican Chicken and Chorizo

- 9 ounces Mexican chorizo
- 1 pound chicken, sliced thin boneless, skinless breasts or thighs work
- 1 cup white queso
In a large skillet, heat chorizo, breaking it up as it warms up.
Once the fat has started to render and it becomes more of a liquid, add chicken and cook until chicken is done and sauce has thickened, approximately 10 to 15 minutes.
Add queso, and stir until combined. If desired, add more queso to your taste.
Serve with rice, refried beans, tortillas or chips.
- Use Mexican chorizo (raw, fresh, uncooked) as opposed to Spanish chorizo (hard, smoked, cooked).
- Beef or pork chorizo works.
- Chicken breasts or thighs work great. Cut into thin slices.
- Use your favorite queso blanco for this recipe. I've used the refrigerated kind, shelf-stable queso dip, or use white Velveeta.
