- 1 pound pork sausage (see notes)
- 2 bell peppers, any color diced
- 1 large onion diced
- 4 cups beef broth
- 1 cup green lentils, rinsed and drained
- 15 ounces diced tomatoes, do not drain
- salt to taste (approximately 1 teaspoon)
Brown and crumble pork sausage in a large skillet. Use a slotted spoon to remove browned meat, and add to crockpot insert.
In the remaining grease in the pan, sauté diced peppers and onions until soft. Add to the crock pot insert.
Add beef broth and lentils to the crock pot with the sausage, peppers and onions. Stir.
Cover and cook on low for 6 to 7 hours or high for 2.5 to 4 hours or until lentils are cooked and soft. Cook time will vary depending on how old the lentils are.
Add undrained can of diced tomatoes. Cook for an additional 30 minutes with the lid on.
Taste and season appropriately with salt.
- Use your favorite type of pork sausage. Breakfast sausage, Italian Sausage, Hot, Mild, pretty much any type works. You could also use bulk pork sausage or sausage links. If you use links, remove the casings before browning.
- Chicken broth can be used for beef broth.
- Green lentils work best since they hold up to longer cooking times.
- Be sure to rinse and drain the lentils well before adding to the crock pot.
- Substitute your favorite vegetables for the onions and peppers, if desired. Diced carrots, celery, or green beans would be great additions to this crock pot lentil soup with sausage.
- The cooking time of lentils will vary depending on how old the lentils are. Older lentils will take longer to cook.
- Do not add salt until the very end of cooking for it could affect the cooking process and time.
- The acid in the diced tomatoes will also affect the cooking which is why they are added the last 30 minutes of cooking.
- Substitute other types of diced tomatoes for plain, if desired. Fire-roasted, diced tomatoes with garlic and Italian seasonings and Rotel all work great.
