Ingredients

  • 4 - 8 pork chops, 1/2 inch thick
  • 10.5 ounces red enchilada sauce
  • 10.5 ounces cheddar cheese soup
  • 1 - 2 cups shredded Mexican cheese (see notes)

Instructions

  • Line slow cooker with liner or spray with nonstick cooking spray.
  • In a small bowl, mix enchilada sauce and cheddar cheese soup until smooth.

Notes

  • I used 1/2 inch thick pork chops. If you use thicker, the cooking time may be longer.
  • Substitute Cream of Chicken Soup for Cheddar Cheese Soup, if needed.
  • Use 4 - 8 pork chops for this 4 Ingredient Crock Pot Pork Chop recipe depending on how many your family needs.
  • Using a meat thermometer, be sure your pork chops are at an internal temperature of 145 degrees F before serving.
  • I used Mexican Style Quesadilla cheese for an amazing authentic Mexican vibe.  I find mine at Costco. Any other type of cheese will work too including cheddar, Monterrey Jack, etc.
  • For a spicier Mexican Pork Chop Recipe use Medium Enchilada sauce. For less heat, use mild.
