Topping
- 1 cup flour
- 1 cup sugar
- 1/2 cup butter, cold
Blueberry Goodness
- 3 1/2 cups fresh blueberries
- 1 Tablespoon lemon juice
- 1/4 teaspoon salt
Preheat oven to 375 degrees F. Spray a 2 quart (or 8 x 8 inch) baking dish with nonstick cooking spray.
Add flour, sugar and butter to a medium-sized bowl.
Using a pastry cutter (or a fork, knife or clean hands), cut cold butter into pea sized pieces into the flour and sugar. Set aside.
Combine blueberries, lemon juice and salt. Add to prepared dish.
Sprinkle crumble topping evenly over top blueberries.
Bake for 45 minutes or until lightly golden brown.
Serve with ice cream or whipped cream, if desired.
- I prefer fresh blueberries in this old fashioned blueberry dessert, but use frozen blueberries, if desired.
- Fresh lemon juice is recommended, but using the refrigerated type works too.
- 1 lemon typically yields about 1 tablespoon of lemon juice.
- 1/2 cup butter equals 1 stick.
- Be sure to keep your butter cold before making the crumble topping.
- A pastry blender works great to cut the cold butter into the flour sugar mixture; however, if you do not have a pastry blender, try using a fork, knife or even your clean hands.
