Ingredients

  • 1 - 1 1/2 pounds small Brussel sprouts
  • 4 slices bacon, chopped
  • 1 small onion, cut in half and sliced
  • 1/ cup toasted pecan pieces (see post about roasting pecans)
  • salt and pepper

Instructions

  • To prepare Brussels sprouts, trim and cut X in stem.

  • Boil in salted water until a knife pierces easily, approximately 5 - 10 minutes. Drain and set aside.

  • In a large skillet, fry bacon until crisp. Remove crispy bacon onto a plate, and drain all but 2 tablespoons of bacon fat from pan.
  • Cook the onion in the remaining bacon grease until translucent.

  • Add the boiled, drained Brussels sprouts to the pan, and toss until hot.

Notes

  • Substitute a red onion for a white or yellow, if desired.
  • Store bought toasted pecans could be used, but toasting your own pecans is worth a few extra minutes of effort. See our instructions above in the post on how to toast raw pecans in the oven.
  • Try adding 2 tablespoons of dry white wine to the pan when you add back the Brussel sprouts to the skillet. It takes this dish to a whole new level.
  • Fresh chopped parsley is another optional embellishment when added right before serving.
  • Serve along side beef brisket for the ultimate dinner.
