- 3 cups leftover mashed potatoes
- 1 small onion, chopped
- 1 stalk celery, chopped
- 3 hard-boiled eggs, chopped
- 1 Tablespoon sweet pickle relish, heaping
- 1/2 cup Miracle Whip
- 1/4 cup sugar
- salt and pepper, to taste
- dash paprika, optional
Combine all ingredients except salt, pepper and paprika; mix well. Season with salt and pepper to taste.
If the salad is too stiff, add a little bit of milk to loosen it up.
If desired, sprinkle with paprika before serving.
