This recipe started out by accident. Aren’t those the best kinds?  One night after making Cheesy Ham and Potato Casserole, I ended up with too much cheese sauce.  I also had leftover taco meat and black beans in the refrigerator so I tossed them together and served them up to my hubby.  Much to my surprise, he went nutty over it.  So, I made a mental note, and the next time there was a big game, I whipped up this dip to serve.

Have you ever made a cheese sauce? It’s super simple. Start with equal parts melted butter and flour in a pan to make a roux. Then add milk slowly while whisking to thicken up the milk.  Next, add your favorite cheeses and boom, you have a cheese sauce.  It could be the base of a soup, casserole, dip, or so much more.

The reason this is the best ever Velveeta cheese dip is because it is totally customizable.  Our version has Velveeta, cheddar, taco meat and black beans, but you could use whatever you have in the pantry or leftover in the fridge like sausage, salsa, tomatoes, refried beans, chili, Rotel – just be creative.

How To Make Velveeta Black Bean Dip

Step by Step Instructions

  1. Brown ground beef in a skillet; drain excess grease. Add taco seasoning and mix. Set aside.
  2. In a medium saucepan, melt butter; add flour and whisk for 30 seconds.
  3. Slowly add milk while whisking constantly until thickened.
  4. Add Velveeta and cheddar cheese, stirring until the cheese melts.
  5. Stir in ground beef and drained black beans.
  6. Serve with tortilla chips.

Storage Instructions

Let leftovers cool. Transfer to an airtight container, and store in the refrigerator for 3 to 5 days. Reheat in the microwave.

  1. I love using Velvetta (Mexican flavor), canned Rotel (spicy) and bean dip made locally in Mexican restaurant (Las Tunas). Mix all together and heat in microwave….. Put out the chips (also homemade by Las Tunas) and you have a WONDERFUL dip! IMO don’t believe meat is needed with the beans flavor…
