I love changing things up for dinner.  As you know, it can be hard to get kids to eat something other than ground beef, noodles, or spaghetti.

Well, I finally found a recipe so completely different than what I typically serve at home, and the kids love it.

I was also a little leery about making this for my husband (he can be a picky eater). But he ate seconds and commented on how yummy they were…a total surprise to both of us.

Essentially, these Thai chicken wraps are sautéed chicken and broccoli slaw served in a tortilla with homemade peanut sauce.

The homemade peanut sauce is what sets these wraps apart from others. The sauce is really simple to make. All you do is heat peanut butter, sugar, water, vegetable oil, soy sauce and garlic in a small saucepan until the sugar is dissolved.  The result is a delicious sauce that you could easily eat by itself with a spoon.  Not to mention the fact that it is a home-run with the kids.

To make them a bit more festive, use red or green tortillas instead of plain ones OR serve them in a fun tortilla warmer.  Or, to go low carb or keto, serve in a lettuce wrap instead.

Making peanut sauce from scratch is fast and simple.  In a small saucepan, whisk together peanut butter, vegetable oil, sugar, soy sauce, water and minced garlic. Heat until it starts to boil, whisking constantly.  Once the sugar is dissolved, it’s ready to eat.

Making a homemade peanut sauce is easy.  Now the question is, what can I do with peanut sauce? Here’s five ways to use peanut sauce.

Broccoli slaw is similar to traditional coleslaw except that shredded broccoli is substituted for shredded cabbage.  Find bagged, prepared broccoli slaw mix in the refrigerated section of the grocery store.  Broccoli slaw mix contains shredded broccoli, carrots and red cabbage.

Use broccoli slaw mix to make a traditional mayonnaise based coleslaw. We love using it as the base for our stir fry meals with chicken, beef and even ground pork.

How do you make broccoli slaw from scratch?

Making homemade broccoli slaw is an easy process.  Shred broccoli stems, carrots and red cabbage and mix together into a broccoli slaw mix.  To make it super easy, use a shredding attachment on a food processor.

HOW TO MAKE CHICKEN WRAPS WITH PEANUT SAUCE:

  1. Season sliced chicken breast with garlic salt and pepper.
  2. In a large skillet or frying pan, sauté in a skillet with hot vegetable oil. Remove from pan.
  3. Sauté a bag of shredded broccoli slaw and ginger until tender.
  4. Add the chicken back to the vegetable mixture.
  5. Meanwhile, add peanut butter, soy sauce, water, vegetable oil and garlic to a small saucepan. Heat until sugar is dissolved, stirring constantly.
  6. To serve peanut chicken wraps, smear warm tortillas with the peanut sauce, and fill with chicken/broccoli mixture.

Ingredients

Thai Chicken Wraps

  • 6 8 or 10-inch plain, red or green tortillas
  • 1 pound boneless skinless chicken breast cut into strips
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1 Tablespoon vegetable oil
  • 1 bag packaged shredded broccoli broccoli slaw mix
  • 1 teaspoon grated fresh ginger

Peanut Sauce

  • 1/4 cup sugar
  • 1/4 cup peanut butter
  • 3 Tablespoons soy sauce
  • 3 Tablespoons water
  • 2 Tablespoons vegetable oil
  • 1 teaspoon minced garlic

Instructions

  • Wrap tortillas in foil, and warm in a 350 degree F oven for 10 minutes.
  • Combine garlic salt and pepper; add chicken and toss to coat evenly.
