So when I found this strawberry quick bread recipe using frozen strawberries, I knew I had to try it.

You can find frozen strawberries in the freezer section of most grocery stores. Be sure to let them thaw before making this recipe. Just be sure to keep the strawberries juices; do not drain away.
When you add them to the mixer, and turn it on, it makes the prettiest pink batter. To make it more pink (if desired), add red food coloring to the batter.
Strawberry Bread with Strawberry Glaze
I decided to take this a step farther by adding a strawberry glaze. It is the icing on the cake, literally and figuratively. The glaze is really a traditional recipe with the addition of your favorite strawberry jelly or preserves.
This recipe makes to 2 loaves of strawberry quick bread. Share one with a friend, or wrap tightly in foil and put in a resealable freezer bag to store in the freezer. You’ll have breakfast or dessert in a pinch.

How to Make Strawberry Bread with Frozen Strawberries
Step By Step Instructions
- Add wet ingredients (thawed berries, oil and eggs) to mixer and blend until fully incorporated. In a different bowl, lightly mix together dry ingredients.
- Slowly add dry ingredients to wet ingredients, stir, just barely, mixing between each addition. Fold in chopped nuts and mix.
- Pour into 2 greased and floured 5 x 9-inch loaf pans.
- Bake at 350 degrees F for 50-60 minutes or until a toothpick comes out clean.
- Let cool for 10 minutes in the pan, and then remove from pan and let rest on a wire rack. Let cool before glazing.
- For glaze, mix powdered sugar, softened butter, strawberry jam and milk until smooth. Pour over bread and let glaze harden.
- Slice into thick or thin slices to serve.
Storage Instructions
- Once the bread is completely cooled to room temperature, wrap in either plastic wrap or place in an airtight container. Store in the fridge for up to a week.

- 1 teaspoon baking soda
- 1 teaspoon salt

- 1 cup powdered sugar
- 1 Tablespoon butter, softened
- 2 Tablespoons milk
- 2 – 3 Tablespoons strawberry jam or preserves

Cake is brilliant, easy to make and tastes really good. I used mixed frozen fruit but wasn’t a prblem. My only complaint was there is no temperatures for cooking. Used temps from a similar recipe.

I swapped 3/4 cup of plain Greek yogurt for 1/2 cup of the oil (so in total I used 3/4 cup oil and 3/4 cup Greek yogurt) and it turned out beautifully.

When a bread recipe like yours insructs to “mix” after using a mixer do we use a mixr or spoon?
You can use a mixer or just mix by hand as you don’t want to overmix.

How long is this good after baking it?? And do I store refrigerated or on the counter ?? Thank You
It should be good on the counter for up to 5 days unless it’s really warm. Keep it out of the sun. Putting it in the refrigerator will change it’s texture a bit.
