This Pork Chop Potato Bake was a special request from one of Barbara’s Glenwood sisters after we posted Thai Chicken Wraps and Cheesy Mexican Chicken recipe recently. It is another favorite dish of Barbara’s from her college days. Over thirty college girls in one big house means there was some serious cooking going on.
When she makes it for her husband, Kevin, he always asks for seconds! The sauce is a rich, decadent combination of sour cream, cheese and cream of mushroom soup. And, the pork chops come out nice and fork-tender.

Step by Step Instructions
- Preheat oven to 350 degrees F. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
- Brown seasoned pork chops in oil.
- In a large bowl, combine soup, milk, sour cream, salt and pepper; stir in hash browns and 1/2 of cheese.
- Pour hash brown mixture into prepared baking dish; arrange browned pork chops on top. Cover with foil.
- Bake for 40 minutes; remove foil and top with remaining cheese. Cook for an additional 5 minutes.
Storage Instructions
Let leftovers cool. Transfer to an airtight container, and store in the fridge for up to a week.
