Lemon Jello Shrimp Salad
For her wedding, Barbara received this recipe from a family friend as part of a larger collection of favorite recipes. To be honest, she didn’t try this salad for several years but decided recently to pull out the recipe card and give it a go. She’s kicking herself for waiting so long to make this dish!
Need an unique dish to serve at your next pitch-in or bridal/baby shower? This recipe makes a large bowl which makes it perfect to share. It is delicious with crackers, but is equally tasty served on a croissant.
The lemon flavor from the Jell-O compliments the tiny shrimp and hard boiled eggs. The dressing is made out of whipped cream, pimento cheese spread with hints of onion and green pepper to top it off.
This recipe includes several, let’s just say, not-so-common ingredients, including tiny shrimp in a can and pimento cheese spread. We’ve included links to these products in the recipe card below.

Old-Fashioned Lemon Jello Shrimp Salad
Ingredients
- 3 oz package Lemon Jell-O
- 1 1/2 cups boiling water
- 1/2 teaspoon salt
- 1 Tablespoon grated onion
- 1/2 cup heavy cream
- 1/2 cup mayonnaise
- 8 oz. pimento cheese spread
- 4 oz. can tiny shrimp, well drained
- 1 Tablespoon green pepper, chopped finely
- 3 hard-boiled eggs, chopped
Instructions
- Dissolve lemon Jell-O in the boiling water. Stir in salt and grated onion.
- Put the lemon Jell-O mixture into the refrigerator until it begins to set, approximately 15 minutes. If you turn the bowl, and the Jell-O moves as one glob, it is ready.
- Meanwhile, in a chilled mixing bowl, whip the heavy cream until firm.
- Once the Jell-O is set, add whipped cream, mayonnaise and pimento cheese spread. Beat on low until just incorporated. Be sure not to over beat so that you don't break the heavy cream.
- Add the drained tiny shrimp, green pepper and hard boiled eggs; stir until completely mixed.
- Chill until set, approximately 3 to 4 hours.
- Serve with crackers or as a sandwich.

Jeff – Sorry about that, obviously we missed an important step in the recipe card! It’s fixed now. Once you have the whipped cream ready, you add it to the jello along with the mayo and pimento cheese spread. Then add the shrimp, green pepper and eggs.
