She mentioned making a “Grinch” cake, and her daughter jumped all over that. So Barbara set out to fulfill that promise, and oh boy, are we glad she did.
Mini Pistachio Coffee Cakes
These little cakes are super easy and super tasty. They use a boxed yellow cake mix and a box of instant pistachio pudding mix. And they are very moist because of the addition of sour cream and orange juice.
Mini Pistachio Bundt Cakes with Streusel Topping
We used a mini bundt cake pan to make these pistachio Bundt cakes dainty and so cute! Be sure to cover the cracks and crevices of the individual Bundt pans with shortening and then the cinnamon/nut mix. If you don’t have a mini Bundt pan, do not worry. A regular cupcake pan works great too.

Yellow Cake Mix, unprepared
Pistachio Pudding Mix, instant
Eggs
Sour Cream
Vegetable Oil

How to Make Pistachio Bundt Cakes with Sour Cream (mini-sized)

Instructions:
- Mix together dry yellow cake mix, unprepared pistachio pudding mix, eggs, sour cream, orange juice, vegetable oil and vanilla extra.
- If a brighter green color is desired, add green food coloring to the batter until the desired color of green.
- Grease mini bundt pans generously with shortening getting into all cracks, crevices and the center piece.
- In a small bowl, combine chopped pecans, sugar and cinnamon.
- Pour 1 tablespoon of the cinnamon sugar mix into each prepared mini Bundt, sprinkling on all sides.
- Add 2 – 3 tablespoons of cake batter on top the cinnamon sugar mixture in the pans.
- Bake for 25 to 30 minutes.
- Let cool 5 minutes.
- Take a knife and work around the edges of each mini pistachio bundt cake. Invert and remove from pan.
- For optional glaze, mix powdered sugar, milk and vanilla until smooth.
- Drizzle over top of each cake. If desired, top with a maraschino cherry.
Notes About Pistachio Bundt Cake with Streusel:
- If you do not have a mini Bundt pan, use a regular cupcake pan.
- Grease the pan generously with shortening or else the cakes will not come out easily.
- Add as much or as little green food coloring to the cake mix to get a bright green Grinch cake.
- Nuts can be omitted.
- Glaze and maraschino cherries are optional.

Ingredients
Streusel Topping
- 1 cup finely chopped pecans
- 2/3 cup sugar
- 2 Tablespoons cinnamon
Pistachio Bundt Cake
- 1 box yellow cake mix
- 1 small box instant pistachio pudding mix
- 4 eggs
- 1 cup sour cream
- 3/4 cup orange juice
- 1/4 cup vegetable oil
- 1 teaspoon vanilla
Glaze
- 2 cups confectioners sugar, sifted
- 1/2 teaspoon vanilla
- 3-4 Tablespoons milk
- Maraschino cherries optional
Instructions
- Preheat oven to 350 degrees F.
- Grease mini Bundt cake pan generously with shortening.
- Mix together pecans, sugar and cinnamon in a small bowl; sprinkle 1 Tablespoon into each mini Bundt crevice.
- Mix together cake mix, pudding mix, eggs, sour cream, vegetable oil, orange juice and vanilla in a mixing bowl; add green food coloring until it reaches your desired color of green (we used 12 drops).
- Fill each Bundt crevice with 2 -3 heaping Tablespoons of cake batter.
- Bake for 25 to 30 minutes or until toothpick comes out clean.
- Let cool for 5 minutes; invert to release cakes.
- For glaze: Mix together confectioners sugar, vanilla and milk until desired consistency. Drizzle over cakes. Fill Bundt center with 1-2 Maraschino cherries if desired.
