How to Make Instant Pot Shredded Beef

Step by Step Instructions

  1. Place the beef chuck roast into the pressure cooker vessel.
  2. In a small bowl, combine diced tomatoes, water and taco seasoning; pour over roast.
  3. Cover and seal, ensuring the venting valve is closed.
  4. Pressure cook for 60 minutes for thawed meat or 90 minutes for frozen meat. Allow the pressure to release following the natural release method.
  5. Shred with two forks or chop the meat. Add the shredded beef taco meat back to the juices. If desired, season to taste with salt and black pepper.
  6. Use it in beef tacos or burritos, quesadillas, over rice, or on top of tortilla chips for yummy nachos. Garnish with your favorite taco toppings such as sliced avocado, pico de gallo, salsa, black olives, fresh cilantro, sour cream, sliced jalapenos, guacamole, shredded cheese, fresh lime juice, etc.

Storage Instructions

Let leftovers in an airtight container in the refrigerator for up to a week. Or, freeze in a freezer-proof container for up the 3 months.

Yes, frozen beef roasts can be cooked in the instant pot; just be aware the the cooking time needs to be extended. I add approximately 30 minutes to the cooking time when using a frozen roast. If the beef isn’t perfectly fork tender once you’ve opened up the pressure cooker, add the meat back the juices and continue to cook on the saute mode until cooked through.

    1. While we haven’t made this specific recipe in the crock pot, cooking roasts in our slow cooker is a favorite of ours. Cook on low for 8 hours and you should be good.
