Many moons ago, Barbara went to Purdue University where she lived in Cooperative housing with a large group of girls. The house, called Glenwood Cooperative, was run by these girls who shared cooking and cleaning duties.
Barbara has a ton of great recipes from her Glenwood days, including this Egg and Sausage Breakfast Casserole. She actually made it on a whim because she had a bunch of white sandwich buns left over from a birthday party. I think our Grandma Kuhn would be proud of her for not wasting them.

How to Make Sausage and Egg Breakfast Casserole with bread
Step by Step Instructions
- Preheat oven to 350 degrees F. Grease a 8×8 inch baking dish.
- Brown sausage in a large skillet. Drain if needed.
- Whisk together milk, eggs, dry mustard and salt.
- Mix in cheddar cheese, drained pork sausage and cubed white bread with into the egg mixture.
- Pour into greased dish and bake for 30 – 40 minutes.
- Let sit 5 minutes before serving
Storage Instructions
Let leftovers of this easy breakfast casserole cool. Transfer to an airtight container or cover tightly with aluminum foil or plastic wrap, and store in the fridge for up to a week. Rewarm in the microwave.

9 x 13 Breakfast Casserole
This recipe is for an 8-inch x 8-inch baking dish but if you have a larger family (or just a hungry family) or want it for a get-together, it is easily doubled and can fit in a 9-inch x 13-inch or similar size baking dish.
To make a 9 x 13 breakfast casserole, follow these instructions.
- Brown 1 pound breakfast sausage; drain off excess grease.
- In a large bowl, beat 8 eggs.
- To the eggs, add 2 1/2 cups milk, 1 1/2 teaspoons dry mustard, 1/2 teaspoon salt, 1 1/2 cups shredded cheddar cheese, and 2 cups cubed white bread.
- Pour into a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray.
- Bake at 350 degrees F for 30 to 40 minutes.

Love that this came out just as good as the recipes requiring ingredients to sit overnight before baking. I combined the best of the 2 approaches. Mods: 1/2 c. cream for part of the milk; the green chiles & sourdough bread as someone else recommended; green onion, black pepper, mixed cheeses (sharp cheddar & pepper jack) & sprinkling of paprika on top for color. Perfection!
