Easy Pancake Sausage Casserole Recipe

Did you know you can take simple pancake mix and turn it into a pancake casserole? Think of it as a true “pan” cake.  We didn’t know this either until stumbling upon a recipe in an old Charleston cookbook.

Simply, cut the cake into squares or rectangles and serve with syrup. Our baked pancake bake goes one step further. We combine the side of meat with the pancakes so it’s an entire breakfast casserole in one.

For my family of 2 adults and 3 children, this recipe is perfect; it makes an 8 x 8 inch pancake, and we eat every bite. For a bigger or hungrier family, simply double or triple the recipe. If you double it, use a 9 x 13 inch baking dish.

How to Make Baked Pancakes with Sausage

Step by Step Instructions

  1. Preheat oven to 450 degrees F. Spray an 8 x 8 inch baking dish with nonstick cooking spray.
  2. In a large bowl, beat pancake mix, egg, and milk until smooth; stir in melted butter to the mixture.
  3. Pour the pancake batter into the prepared baking dish; arrange cooked sausage over top.
  4. Bake for 20 minutes or until a toothpick comes out clean.
  5. Serve with maple syrup and extra butter if desired!

Storage Instructions

Let leftovers cool. Cover tightly with plastic wrap or transfer to an airtight container. Store in the fridge for up to a week.

  • 1 cup pancake mix

  • 1 cup cooked breakfast sausage, sliced or diced

Instructions

  • Preheat oven to 450 degrees F.

  1. i made this for a celebratory breakfast, everyone loved it. I used about 2/3 of a pound of sausage, sprinkled it over the top of the pancake mixture.
