Dainty Log Butter Cookies with Chocolate Chips

Of all the different varieties of old fashioned Christmas cookies our Mom makes, these are Barbara’s favorite cookie recipes, and they are the first to be eaten from the huge cookie tray on Christmas day.

Now, we know Dainty Log Butter Cookies is an unusual name but don’t let that stop you from trying these. We promise you will love them. Why are they called dainty logs? These are supposed to be made small and dainty, although I think ours have grown over the years.

Our Mom loves nuts which is why most of the cookies our mom makes have pecans in them or on top of them. You can use whatever type of nuts that you prefer OR leave them off if you prefer a nut-free cookie.

These shortbread cookies with chocolate chips are topped with melted chocolate chips and can have chopped pecans on top.

How to melt chocolate chips?

Chocolate chips can burn easily during the melting process. To melt in the microwave, add chocolate chips and butter in microwave-safe dish. Heat in 30 second intervals, stirring between each interval. Once the chocolate is almost melted, stir until smooth.

Another melting method is to use a double boiler.  Heat water in a saucepan on the stove and place a glass bowl with the chocolate chips (and butter) over the boiling water. Stir until melted.
