Both Barbara and I have a confession to make…neither of us have ever truly fried chicken!

It’s too messy, and our local restaurant makes some pretty good fried chicken! Barbara, as a busy momma, doesn’t have time for that. (And I’m just too lazy.)

So, Barbara decided to make an easy “mock” fried chicken, and it is a hit. Nobody would ever guess that it was made using the crock pot.  The crock pot crispy chicken is moist from the slow cooking process, and the skin is crispy from the broiling step.

Southern Fried Chicken in Slow Cooker

In a nutshell, this slow cooker recipe bastes the chicken slowly, and then the broiler is used to crisp up the skin, giving it the “fried” texture you know and love. Barbara likes to use her Casserole Crock Pot for this but a regular slow cooker will do.

The cooking time may vary so we suggest you use your trusty meat thermometer and check it starting at 2 hours. It needs to be at an internal temperature of 160 degrees F. (Need help using a meat thermometer? Check out this post on My Fearless Kitchen.)

The seasonings are so simple, just garlic salt and black pepper. We used Garlic Salt with Parsley because that is what we had on hand but any garlic salt will do.  Or, if you’re lacking garlic salt, use a blend of garlic powder and regular salt.

You can use as many pieces of chicken as your family requires for dinner. Just use a ration of one tablespoon of butter for one piece of chicken.

Skin-on Chicken, (use your favorite cut-chicken thighs, breasts, quarters, etc.)

Garlic Salt

Black Pepper

How To Make Slow Cooker Fried Chicken

Step by Step Instructions

  1. Season chicken pieces with garlic salt and pepper.
  2. Rub softened butter over the top and bottom of each piece of chicken.
  3. Cook on high for 2 to 4 hours or until internal temperature reaches 160 degrees F.
  4. Move chicken skin side up to a broiler pan.
  5. Broil on high until skin is golden brown and crispy.

Storage Instructions

Let leftovers cool completely before transferring to an airtight container. Store in the fridge for up to a week.

How to get crispy chicken in the crock pot?

To get a “fried” chicken or crispy chicken skin using the slow cooker or crock pot actually requires the use of the oven, specifically the broiler.

  1. Turn on the broiler to high.
  2. Place chicken, skin side up, on a broiler pan.
  3. Broil for approximately 5 minutes, watching closely.

The skin could burn if left unattended.  You may also want to move turn the chicken a couple times to get each side of the skin close to the broiler.

Is it OK to put raw chicken in slow cooker?

Yes, it is safe to put raw chicken in a slow cooker as long as it reaches the appropriate internal temperature of 165°F when cooked.

    1. It is. Looking back, we probably should have called it more of a roasted chicken than a fried chicken since the outside isn’t quite “fried chicken” like!
