Crock Pot Ground Beef Enchiladas are a great recipe for your casserole crock pot. With only six ingredients, ground beef enchiladas without enchilada sauce are quick to put together in a casserole slow cooker and can satisfy the family’s need for Mexican food. Follow these simple directions on how to make enchiladas in the crockpot.

Crock Pot Ground Beef Enchiladas
Barbara stumbled upon this recipe in her trusty Pot O’Gold Cookbook and decided to convert to a crock pot recipe. She used her casserole crock pot but you use a 6-quart slow cooker as well.
I love this particular slow cooker enchilada recipe because it’s not an enchilada casserole. These are true enchiladas that you can scoop out and serve just like you get at your favorite Mexican restaurant.

Large Flour Tortillas
Ground Beef
Green Peppers, diced
Tomato Sauce
Velveeta Cheese (Cheese Melt)
Canned Beans, kidney or pinto beans
Rotel (diced tomatoes with chili peppers)
Ground Beef Enchiladas Without Enchilada Sauce
These ground beef enchiladas do not need enchilada sauce. Let me repeat, these are ground beef enchiladas without enchilada sauce.
Instead, the simple sauce is made with cheesy Velveeta and tomato sauce (small can). On top, an undrained can of Rotel (diced tomatoes and chili peppers) are poured right over top the rolled up enchiladas.
It’s truly easy as can be.
How to Make Slow Cooker Enchiladas:

- Brown ground beef and peppers; add tomato sauce, and cook for 5 minutes.
- Add beans and Velveeta; stirring until the cheese melts.
- Spray the crock pot insert with nonstick cooking spray.
- Fill each tortilla with meat mixture, arrange in the crock pot insert seam side down.
- If there’s remaining meat, arrange over top. Sprinkle with remaining cubes of Velveeta cheese. Pour canned tomatoes over top.
- Cover and cook for for 3-4 hours on low.
Notes About Crock Pot Beef Enchiladas:
- Use any color bell peppers for the green, if desired.
- Spread leftover ground beef enchilada filling over top the rolled enchiladas before adding the Rotel.
- If your family doesn’t like any spice, you can substitute a can of regular diced tomatoes for the tomatoes with chilies.
- If you want to make it in the traditional oven, place in a 13 x 9 inch baking dish, cover and cook at 350 degrees F for 20 minutes. Uncover and cook for additional 5-8 minutes.
- Barbara likes fixing these in her casserole crock pot on the weekend when she’s prepping several meals for the week and can have these cooking while she’s fixing another meal in the oven and another on the stove-top. (She’s kind of an overachiever when it comes to meal prepping.)

Mexican Recipes with Ground Beef
Crock Pot Ground Beef Enchiladas - How to Make Enchiladas in the Crockpot
Ingredients
- 1 lb. ground beef
- 3/4 cup green peppers chopped
- 8 ounces tomato sauce
- 15.5 ounces canned kidney or pinto beans, drained
- 1/2 lb. Velvetta cheese cubed
- 6 - 8 6-inch flour tortillas
- 10 ounces canned tomatoes with green chilies (Rotel)
Instructions
- In a large skillet, brown ground beef and green peppers; add tomato sauce and cook for 5 minutes over medium heat.
- Add beans and 1/2 of the Velveeta cheese; continue to cook until cheese melts.
- Fill each tortilla with 1/4 cup meat mixture; arrange in the insert of a casserole crockpot insert that has been sprayed with nonstick spray with the seam side down.
- Top with remaining meat mixture. Top with other half of cubed Velveeta cheese. Pour can of tomatoes (undrained) over the top.
- Cover and cook over low heat for 3 to 4 hours.

I would have to add some seasonings to it and maybe a can of green chilies. seems like it would be bland with just items listed. Plus I think I would bake it.
Great thing about this dish is that you can easily customize it to your taste and green chiles are a great way to do that. And baking is definitely an option (we tell you the timing in the post)!
I have never had this so I was excited to try! I did mine in the oven because my crockpot is small. It was still easy and really good! A must try!
