Recently, Barbara was flipping through Fix-It and Forget-It Cookbook that our granny gave her. She didn’t have all the ingredients for any particular recipe so she morphed two recipes into one and, poof, out came this easy corn chowder recipe.

Soup is a go-to for our family in the fall and winter for many reasons including the fact that it’s so versatile to make, it’s warming and hearty, and it serves a crowd. Barbara’s kiddies love this chicken corn chowder so it will definitely be on repeat.  Of course, top almost anything with cheese and some crushed up crackers, and the kids gobble it up.

Crock Pot Chicken Corn Chowder Ingredients:

  • Chicken
  • Diced Potatoes
  • Creamed Corn
  • Whole Kernel Corn
  • Diced Tomatoes with Basil and Garlic
  • Great Northern Beans
  • Evaporated Milk
  • Tomato Sauce
  • Salt and Pepper
  • Half and Half

How to Make Chicken Corn Chowder in your Slow Cooker

  1. Dump all ingredients EXCEPT for the half and half and salt/pepper into Crock Pot.
  2. Cook for 8 hours or until chicken is cooked through and tender.
  3. Add remaining ingredients, and cook for an additional 30 minutes or until warmed through.
  4. Serve and top with cheese and crackers.

  • Drain canned, regular corn and beans before adding to the slow cooker.
  • This is such an easy slow cooker chowder recipe.  Open the cans, and toss them in. Fix it and forget it.
  • Do not put the half and half in until the end of the recipe, about 30 minutes before serving.  You don’t want it to curdle.
  • To lighten things up, use fat free evaporated milk.
  • If you’re lazy, put whole chicken breasts in this crock pot chowder, and shred them before putting in the half and half.

Ingredients

  • 14.75 oz. can cream style sweet corn
  • 15 oz. can whole kernel sweet corn, drained
  • 14.5 oz. can diced tomatoes with basil, garlic & oregano
  • 15 oz. can great northern beans, drained
  • 12 oz. can evaporated milk
  • 8 oz. can tomato sauce
  • 1 cup potatoes diced or shredded
  • 2 chicken breasts diced
  • 1 cup half and half
  • Salt and pepper to taste

Instructions

  • Combine cream corn, sweet corn, diced tomatoes, beans, evaporated milk, tomato sauce, chicken and potatoes in slow cooker.
  • Cover and cook on low for 8 hours or until chicken is tender.
