Oh, I’ve also got refrigerated biscuits?  What can I make with ground beef and biscuits?

Ladies and gentlemen, we have a solution!

These are almost too easy, according to Barbara. She found the recipe in a local cookbook – Shelby County Extension Homemakers 1988 Cookbook – from Martha Wood, Mother’s Night Out.

Easy Cheeseburger Turnovers

Cheeseburger Turnovers (also called Cheeseburger foldovers, Cheeseburger pockets, cheeseburger hand pies, or Cheeseburger bombs) are great for those children (and some adults) who don’t want anything too unusual or new on their plates. Barbara made these for lunch and her oldest daughter asked her to make them again for dinner.

If your family isn’t full of picky eaters, it would be really easy to add some finely chopped onion to the hamburger mix and top with with a pickle before the filling is sealed inside the biscuits. If you have BOTH kinds of eaters, then do half plain and half with the extras!

Another way to customize them is to fill with a little less OR a little more ground beef depending on who is eating them. Some children prefer the biscuit more than the filling so why waste it! Just add a bit more to the adult versions.

How to Make Cheeseburger Pockets

Step by Step Instructions

  1. Preheat oven to 425 degree F.
  2. In a large skillet, brown meat over medium-high heat; season with salt and black pepper if desired, and drain.
  3. Roll out biscuits until thin; top with one slice of American cheese.
  4. Top with a second biscuit that has been rolled thin.
  5. Pinch sides with fork to seal edges.
  6. Brush with milk.
  7. Bake in a preheated oven for 8 to 10 minutes or until golden brown.

Recipe Variations

  • Add onion and minced garlic into the ground beef mixture for more flavor.
  • Season up the ground beef however you like. Onion powder, garlic powder, paprika, seasoning salt, etc all work. You could even stir in taco seasoning.
  • Use other types of ground meats such as ground chicken or ground turkey.
  • Switch up the type of cheese. Shredded cheddar cheese, Velveeta, or any type of cheese will work.
  • An egg wash will work instead of brushing with milk.

Ingredients

  • 1 pound ground beef
  • Salt and Pepper to taste
  • 2 cans of refrigerated biscuits 8 count
  • 8 slices of American cheese
  • 1/4 cup milk

Instructions

  • Brown ground beef seasoned with salt and pepper; drain excess grease.
  • Flatten canned biscuits.
  • Put one heaping Tablespoon of ground beef in center of biscuit.
  • Fold the cheese slices in half and half again and put on top of beef.
  • Top with another biscuit, and seal the edges with a fork; prick top with fork.
  • Place them on an ungreased cookie sheet.
  • Brush top of biscuits with milk.
  • Bake at 425 degrees F for 8 to 10 minutes.
